Ingredients:
Ghee - 1/2 table spoon
Fresh Grated Coconut - 1 Cup
Grated Jaggery - 1 Cup
Water - 1/4 Cup
Cashew Nuts - For garnishing
Method:
1. Take a heavy bottom vessel or non stick pan.Add ghee in a pan on low heat, add cashew nuts to it and roast until crisp and golden for a few seconds and keep aside
2 . Add coconut to same pan and fry for 5 mins in low heat and keep aside
3. Add jaggery and water in a Same vessel on medium heat. In few minutes jaggery will start melting
4. Once the jaggery melt and started to bubble add coconut and cook well in the jaggery syrup.
5. Stir continuously so that it does not stick to the bottom. Cook until the mixture comes close or becomes thick. Do not overcook, else the coconut balls becomes hard. Turn off the heat and keep it aside for few minutes. When the mixture is still warm grease your palm with ghee and start making small balls with the mixture and garnish with roasted cashews.
