Eggless Whole Wheat Tutti Frutti Cake


Ingredients:
1 and 3/4 cups Wheat Flour
1 cup Sugar
1 cup Water
5 tbsp Oil
5 tbsp Tutti Frutti
2 tsp Vanilla Essence
1 tbsp Lemon Juice
1 and 1/4 tsp Baking Soda
A pinch of Salt

Method:
Mix the flour, salt and baking soda and sieve this together to ensure even mixing. Set aside.
Preheat the oven to 180 degree C.
Grease an 8" round cake pan with oil and set aside.
Combine the sugar, oil, water, lemon juice and vanilla in a mixing bowl and whisk until the sugar completely dissolves.
Add the tutti frutti and mix.
Add the flour in 2 bathes and gently fold the mixture until the batter shows no trace of flour. Don't overmix or overbeat.
Quickly pour this batter into the greased cake pan.
Immediately place the pan in the preheated oven. Bake at 180 degree C for 35 minutes or till a toothpick inserted into the middle of the cake and comes out clean. 
Allow the cake to cool down for 15 minutes and then invert.
Let it cool down completely and cut into pieces.



Millets dosa


Ingredients :

Urad dal : 1 cup
Pearl millets : 2 cups
Brown rice : 1 cup 
water as needed 
salt as per taste 
oil 

Method: 
1. Wash urad dal , pearl millets , brown rice  in tap water 3-4 times draining water every time. Soak all the ingredients in water for a minimum of 2 hours up to 4 hours.
2.Soak all the ingredients separately. I used brown rice. You can use white rice  also. 
3.After soaking for 4 hours, we need to grind the ingredients in the following manner. Lets first grind the urad dal. I use a wet grinder to grind. You can use a food processor or mixie too. Urad dal when ground, triples in volume in a stone wet grinder. Be alerted that the urad dal wont increase in volume if ground in a mixie or a food processor. That’s fine. Grind until the dal turns into an incredibly smooth batter. 
4.Add water in regular intervals while grinding. Add up to 2 cups of water. It took 30 minutes in the traditional stone grinder. Transfer the batter to a big bowl and set aside.
5.Adding rice and the millet to grinder. Slowly start grinding and add up to 2 cups of water in intervals while grinding. Grind until the batter is smooth. It took 40 minutes in the grinder. 
6 Transfer the batter and add it to the urad dal batter and mix well for 5 min. Keep the batter in air tight container for fermation .
7.Once the batter is fermented and salt mix well and store in the refrigerator and use it within 3-4 days.
8.When ready for dosa, heat a lightly oiled griddle over medium high heat. half a cup of batter and spread on the pan.Cook the crepe for about half a minute on each side, until the bottom is light brown.
9.server hot with chutney



Red Chori Beans Masala Curry


Ingredients - 


Red Chori Beans 1 cup
Onion chopped 1/2 cup
Tomato chopped 1/2 cup
Ginger-garlic paste 1 tsp (or to taste)
Green chillies 1-2
Coriander leaves chopped 3 Tbsp 
Turmeric 1/2 tsp
Red chilli powder 1/4 tsp (or as per taste)
Salt as needed
Punjabi Chole Masala (Badshah brand) 1 tsp (or as needed)
Oil 2 Tbsp
Jeera 1/2 tsp


Method 


Wash and pressure cook the beans with adequate water. While the pressure cooker is cooling down, the rest of the gravy can be prepared.


In a heated pan, add 1 tsp of oil and saute the chopped onions until golden brown.


Add the chopped tomatoes and let them cook until the tomatoes are mushy. Remove from fire and let it cool down.


Grind the sauteed onion-tomato, ginger garlic paste, green chillies and coriander leaves.


In a deep sauce pan, heat the remaining oil and add jeera. after the jeera starts spluttering, add the above paste and saute it adding a little water. Add turmeric, red chilli powder and salt.


After the mixture leaves oil at the sides, add the boiled red chori beans.


Add the punjabi chole masala and mix well. Remove from fire and garnish with coriander leaves.


Serve warm with Roti/Naan or with Rice.

Oats idly

INGREDIENTS:

Quick Oats / Rolled oats – 1 Cup

Idly Rava / fine sooji – ¾ cup

Buttermilk  – 1.5 cups (more or less to adjust to a idli batter consistency)

Grated Carrots – ½ cup

Green chillies – optional

Ginger Grated – ½ tsp (optional)

Coriander leaves – chopped finely

Baking soda – a pinch

METHOD:

In a wide pan, dry roast the oats for 5 – 10 minutes. Once it is cool, grind it to a coarse powder.

Meanwhile in a vessel, add the idli rava and add some water, just to wet the rava. Keep it aside for about 10-15 minutes..

Add the powdered oats to the rava, mix well.

Add the grated carrots, green chillies (optional), ginger, coriander leaves and a pinch of baking soda. Mix well.

Add enough buttermilk and mix to make it to a batter consistency.

Pour the batter into the idli stand smeared with a little oil.

Cook in the idli cooker or pressure cooker without whistle for 15 mins. Oats idli is ready.

Serve hot with some sambar or chutney.


Millets vada

INGREDIENTS

Millets flour : 1 cup 
Rice flour : 1 cup 
channa dal or moong dal : 1/4 cup soaked
carrot :1/4 cup grated
Green chilles : 3 finely chopped
cabbage : 1/4 cup grated 
water as needed
salt as per taste 
oil for shadow fry

Procedure : 
1. In a bowlmix all the ingredients expect oil as soft dough.
2. Take small balls from dough in your hands , press it well in your palm to small vadai.
3. Heat a pan and place vadai on pan . Fry shallow fry till golden brown.
Served hot with any chutney

OATS AND QUINOA SPICE POWDER


INGREDIENTS

1/4 cup - rolled oats 
1/4 cup - Quinoa 
3 - Dry Red Chillies 
1 tbsp - Urad Dal 
2 tbsp - Channa dal 
2 tbsp - Coriander seeds 
1/4 tsp - Asafoetida powder 
pinch - Turmeric powder 
Salt to taste

Method:

1.Dry roast the channa dal, urad dal and dry red chillies until they turn golden brown.
2.Now add the coriander seeds and dry roast for a few minutes.
3.Finally roast the quinoa and rolled oats for a few minutes along with asafoetida powder and turmeric powder.
4.Add salt to the roasted ingredients and grind as a coarse powder.
5.We can use this powder for dry curries , frys .

Easy Nut Chocolate

Ingredients:

150 gms white chocolate chips
200 gms dark chocolate chips
1/2 cup almonds (finely chopped)


Method:

- Double boil the white chocolate and let it cool
- Microwave the dark chocolate for 50 secs approx and cool it.
- Pour the melted chocolates in two separate piping bags and let it cool
- Pour a white chocolate layer in the mold and tap so that the chocolate spreads well
- Using a paint brush spread the white chocolate around and clean the edges with a tissue
- Set the mold for three minutes in the refrigerator
- Put the chopped almonds filling on white chocolate and fill the rest with dark chocolate
- Tap the mold again to evenly spread the chocolate and let it set in the refrigerator for about 6 mins
- Get them out of the molds and drizzle some chocolate syrup on top or sprikle chopped chocolate
- Refrigerate it another 2 mins and have it anytime you want or gift them in a box !

QUINOA MIXED DAL DOSA



INGREDIENTS

1.Organic White Quinoa – 1/2 Cup

2. Urad dal – 1/2 Cup

3. Channa Dal – 1/2 cup

4. Green split moong dal – 1/2 cup

5. Salt as per taste

6.Green Chillies -2

7. Ginger - small piece

8. Water for grinding

METHOD:

1.Wash Dals and Quinoa 3 to 4 times and Soak overnight or 6 to 8 hours till all Dals is properly Soaked. After Soaking Wash again 3 to 4 times and girnd with Green Chillies, Salt,ginger and Sufficient Water.

2.The batter must be not too thin or thick . No need to FERMENT and you can prepare Dosa right away.

3.Heat a Non stick Pan over Medium High heat . When the Pan is warm enough Grease the Pan with Oil. Spread Oil with the help of Saputula or paper towel. 

3. Pour big spoonful of batter and spread in a circular motion . Drizzle Oil over the edges of the dosa and Brown on both sides .

4.To make Second Dosa , Sprinkle Water on the Pan and Clean with Paper towel to remove any left over batter on the pan. it will also reduces the temperature of the Pan for second dosa.

Serve these nutrient packed Dosa with Coconut Chutney 


Soya Kheema Sandwich


Ingredients:

Soya chunks / Meal Maker- 1 cup cooked 
Onion - 1 large chopped finely
Tomatoes - 1 large chopped finely
Chilli Powder - 2 tsp
chat Masala Powder - 2 tsp
Salt to taste
Oil - 1 tblspn
Coriander leaves - 2 tblspn finely chopped
Wheat Bread Slices - 4

Method:

1.Take cooked soya in a mixer, crush them so it turns into a mince. Set aside . 

2.Heat oil in a kadai. Add  onions and cook till it turn golden.

3.Add  salt and masala powders and mix well. Add in tomatoes and cook till oil separates from it and it turns mushy.

4.Now add in minced soya and toss well with the masala.

5.Add coriander leaves and give one final mix.

6.Take a bread slice, spead the masala over it. Cover with another slice.

7.Heat a sandwich maker or grill. place the sandwich over the grill .spray Oil on  top sides too.  cook till the turns golden colour.

Remove and cut in diagnols.

Serve with green chilli sauce or ketchup.
